INGREDIENTS

Cooked rice. You better cook it and put it in the fridge a night before to avoid the rice being sticky when you fried it with the wok.

Chop green onions

Chop sausage / barbecue pork into dices

Chop mushroom into dices

Wash the choi sum

We don't need the leaves, chop the rest into dices

Heat the wok, pan fried the meat in high heat until sausage turn golden color. Put it on aside for later use, do not turn off the stove.

Add more oil, put 2-3 cloves of crushed garlic; when you smell the garlic, put the choi sum, stir fry till it turn to bright green color, add the mushroom and keep stir fry till turn deep brown.

Keep the stove on, put some more oil, turn to medium heat , pour the eggs into the wok

Put the cooked rice into the wok immediately after you pour the eggs, keep stirring until all rice turn yellow color as covered by eggs.

Turn to high heat, put back all the ingredients, keep stirring and mix them well together. Put some salt and pepper. Turn the stove off. And mix the green onions.
