Gather all the ingredients
Cook the penne pasta
Cut up the onions into little pieces
Cut up the garlic after the onions are chopped up
Skin and cut the pumpkins into pieces
Roast the pumpkins for 20 minutes
Heat oil in a large deep frying pan
Start putting in the onion and garlic into the frying pan
Add in Cumin and Paprika, start stirring till the pumpkins are cooked
After the pumpkins are roasted, put the pumpkins on the pan
Stir for a minute
Drain the water when the penne pasta is ready to go
Add in penne pasta, spinach and stock and start stirring, then start seasoning with some salt and pepper
Serve and enjoy!
