INGREDIENTS
Gather ingredients (full list and measurements in supply list)
Turn oven onto 200 Celsius
Grate lemon rind
Juice lemon
Mash the bananas
Bananas once mashed
Sprinkle a teaspoon of sugar over mashed bananas
Sprinkle lemon juice on mashed bananas and sugar and set aside
Place 3/4 cup sugar 125grams butter and teaspoon grated lemon rind into a bowl
Mix with electric beater
Beat until creamy ... I used raw sugar so it looks a little brownish will look more yellowy if you use white sugar
Break one egg into creamed butter and sugar mix
Beat with electric mixer then add other egg and beat
Dissolve 1 teaspoon bi-carb soda into 1 tablespoon milk
Pour milk mix into creamed butter mix
Add mashed bananas and mix until combined
Sift in 1 cup of flour and mix until combined then sift second cup of flour and mix
Make sure it is mixed well
Grease a pan
And spoon in cake mixture
Place into oven
Cook for 50minutes or until a skewer is inserted and comes out clean
Once the cake is cooked leave it to cool for a few minutes
Take it out of the pan and cool on a wire rack
Once the cake is cool it can be iced... Normally I make my own cream cheese icing but I wanted to try the new pre-made stuff today
Evenly spread the icing over the cake
Decorate with walnuts if desired
Finished product... Banana cake with cream cheese icing
- 2.0 Ripe bananas
- 1.0tsp Lemon Juice
- 125.0g Butter or margarine
- 1.0tsp Finely grated lemon rind
- 3/4c Sugar
- 2.0 Eggs
- 1.0tsp Bi-carb soda
- 1.0Tbsp Milk
- 2.0c Self-rising flour
