INGREDIENTS
Peel and cut the potatoes in small cubes. The number of potatoes depends on how big the omelette is. This is for one person. Bigger omelette = more potatoes and eggs
Start cooking the cubes in the oil. You can add salt to the raw potatoes but I tend to put it with the eggs
Whisk the 2 eggs. Here you can add the salt, the amount depends on your taste. You can add here ingredients that don't need cooking, like tuna or chorizo
When the potatoes are cooked, add them to the eggs and mix everything well
Add the mixture to an oiled pan. I just put a bit of oil and spread with a paper towel. This pan is a great size for a one person omelette
Cook Until you see the egg is done, put the plate on and then hold it tight when you flip the pan
Return the omelette to the pan to cook the other side. It will take a lot less to cook
All done! You can add onion, green peppers, chorizo... Onions and peppers need to be cooked with the potatoes
- 2 medium potatoes
