These are the best packages I've ever made!! I don't have pancake mix in the house anymore. What's the point when these are that good? My recipe is based off the recipe from www.everydaybelle.com
Gather your ingredients. The Greek yogurt can be your favorite brand, though it's best to use plain. And vanilla is completely optional, that's why I still consider these 4 ingredient pancakes.
Place your griddle/skillet over medium heat. I do this first so the pan will be ready when the batter is finished. I use olive oil spray but you can use whatever you normally do so they won't stick.
Mix the Greek yogurt and the egg together first. I suggest mixing the yogurt in the container first to make sure it's well combined before measuring it out.
Mix well until it is a pale yellow color. In hindsight, I should have used our clear mixing bowl. Oh well. I use my small whisk that is for my hand mixer though a spoon or spatula is fine too.
Next, add the flour and the baking soda. Mix until well incorporated. The batter will not be too thick or too runny. It's just about the consistency you would want for pancakes.
Then if you'd like, add vanilla. I never measure. Vanilla is always good no matter what quantity. But try not to over do it, I probably wouldn't use more than a tablespoon but it's your preference!
I decided to add blueberries to the batter (you can add anything you'd like). I've also used pulp from our juicer and it adds great flavor and moisture (seriously, so good if you can do that).
Then place the batter in the skillet. The batter will typically make about 4-6 pancakes depending on the size you make. And don't worry if they aren't pretty. You're just going to eat them anyway. :)
I use medium heat so I can continue flipping and not burn them easily. You want to make sure they are done so you don't have uncooked batter in the middle. I use a fork to check.
Then, Viola!!! Best pancakes you'll ever make. I put a little butter on mine then topped with powdered sugar. But remember, you can use your favorite toppings... syrup, peanut butter, etc. Enjoy!
