Ingredients for the mash
Peel and chop your potatoes
And trim and chop the leeks into chunks
Add the potatoes to boiling salted water they will take approx 20 mins to cook
Whilst the potatoes are boiling add your chicken into a hot frying pan of olive oil
Turn the chicken to cook nice and even
Once the chicken is browned add the white wine ( a small glass worth, can be more or less depending on how you like it)
Next add the double cream (about the same quantity as the wine, more can always be added if you like) add the pepper and turn the heat off let it simmer whilst you prepare the mash)
When the mash is almost done add the leeks to the water
When the leeks are soft drain the potatoes
Transfer into a large bowl and add pepper, a dash of milk and a knob of butter then mash
Next add the mustard and continue mashing until nice and smooth
And there you have it! To serve pile the mash in the Center of the plate with the chicken on top then pour the sauce around the side of the dish. Enjoy!
