Gather your ingredients.
1 cup chia seeds, put into mixing bowl.
1 cup coconut milk, add to the chia seeds.
Add 2 tsp Vanilla extract to your chia mixture.
Just a pinch of sea salt to the mixture.
Add a dash/pinch of ground cinnamon to the mixture.
Mix all ingredients together until well blended with spatula or whisk.
Pour chia pudding into 4 individual serving dishes. Cover with Saran Wrap and chill over night in fridge. Enjoy topped with any fresh berries, such as blueberries or strawberries when ready to eat.
