How to caribbean mashed plantains
One of my favorite side dishes my "Abuela Eva"use to make. Being from So Fl I've had the pleasure to enjoy it cooked in variety of styles by Cubans, Puerto Ricans& Dominicans. Try it & Enjoy 😊👌

INGREDIENTS
Select your plantains. If you want your mash to be a little sweeter use more of the yellow over the green plantain. You can buy these at you local grocery stores.
Cut your plantains
Add them in a pot of water and salt to taste. Bring them to a boil and reduce heat to med/high and boil up to 20 mins.
Chop up 5 cloves of garlic
Chop up a medium onion
Although, my grandmother used crackling pork (chicharron) I used this salted pork but you can use any salted pork including Bacon. It all depends what is available at your local grocery store
Heat up 2 tablespoons of extra virgin olive oil on medium heat
Now sauté your mixture of garlic, onion and chopped pork for about 10 minutes or until onion is looking translucent.
Drain and peel your plantains.
Mash your plantains and add your sautéed mixture
Mix all ingredients and add 2 tablespoons of extra virgin olive oil
Now it's all done and ready to eat. You can serve it however you like. I used a bowl as a mold and flipped onto a plate for creativity.LOL Hope you guys try it and enjoy it as much as I do. 🍌🍴😊
- 2.0 Green plantains
- 3.0 Yellow plantains (Not Bananas)
- 4.0Tbsp Extra virgin olive oil
- 3.0oz Salted pork or bacon
- 1.0pch Salt
- 1.0 Medium onion
