Choose ripe fruit

Sterilize your jars and lids in steam mode at 250F (121C) for 10 minutes.

Squeeze lemon juice into a bowl with water. The pealed pears will go into this so they don't oxidize

Measure according to amounts included with your pectin

Vanilla and sugar

Place cut fruit into a large heavy pot. Bring to a simmer.

Add sugar and vanilla

Cook to tender and mash into chunks. Ad pectin

Ready to jar

Fill jars

Loosely screw on tops

Place into perf pans

Steam in the combi at 190F (88C) for 10 minutes to pull a vacuum.
