Slice up peeled ginger as finely as possible, add to water in a saucepan with peppermint teabags.  Bring to the boil. Remove teabags and leave on the boil 3 minutes.  Remove any frothy bits.

And serve with a teaspoon of muscovado sugar, or sweetener of your choice. Refreshing and soothing.
