Defrost however many chicken breasts you want. Chop up into cubes (or as cubey as you can get) 4 made about 35 bites, they're a heavy dish so about 6 or 7 is enough for a Thai salad or to sit on rice.
Mix flour, egg and Thai seasoning together in a medium sized mixing bowl. If you like living on the spicy side add cayenne pepper and/or hot pepper juice.
Salt n peppa your chicken.
Soak all the chunks of chicken into the flour mixture. Cover each piece completely, nobody likes bland chicken!
You're going to coat each piece with breadcrumbs to give the bites that nice crunchy coating. Only put enough breadcrumbs in a bowl for about 6 pieces at a time (in other words 1/3 a cup).
It makes a speedy process if you bread some while others are frying. One person assembly line yeah!
Add a generous amount of vegetable oil to a frying pan and turn the burner on medium. Be careful with this kind of deep frying, if the pan gets too hot the oil sparks like fireworks! :s
Flip after 4-5 minutes on one side.
Voila! Top with a Thai sauce or sweet chili sauce. Putting these into Thai salad with lettuce, chopped carrots, cashews, green onion, peppers and vermicelli noodles is delightfully yummy!
