Lets get started!
Pre-heat oven to 350 and onwards to prep!
This recipe calls for buttermilk but if you, like me, don't have much of a need on a regular basis, milk with vinegar or lime juice will do!
For every half cup of buttermilk: start with adding a half tablespoon of vinegar to your measuring cup. If you have a liquid measuring cup that would be better.
Fill the rest of the measuring cup with milk. Repeat this 3 times to total 1 1/2 cups for this recipe.
Pour into a container and mix!
We're gonna need 1 cup wheat bran.
Pour into your mixing bowl. We're gonna start with all the dry ingredients first because if you add the wet stuff at the same time you can end up with clumps of flour and clumps if salt, etc.
2/3 of a cup all purpose flour
Into your mixing bowl!
2/3 of a cup whole wheat flour
And into the bowl!
1 and 1/4 teaspoon baking soda
You guessed it, into the bowl!
1/8 of a teaspoon salt
Into the bowl!!
1/4 cup flax seed. This stuff is great to give your muffin a little crunch!
Yep, with the rest of it!
Finally, mix it well to make it anti clumpy!
Tada!
New bowl! Add 1/3 cup sugar
Into this new bowl, where all the wet ingredients will go. You'd ideally get a round bowl but hey, whatever you've got!
1/2 cup applesauce!
Liquid bowl
1 and 1/2 tablespoons vegetable oil
1 teaspoon vanilla
Mix mix mix!
Yeah, look at that... Deliciousness.. Yeah.. It tastes good! Try it!
Oh yeah! The milk! Add that! 1 and 1/4 cup buttermilk so a little less than that of milk and 1 and 1/4 tablespoon vinegar or lime juice
Add an egg! I forgot until after I added the liquids to the dry stuff. No big!
Mix and make sure the sugar is as dissolved as its gonna get with cold ingredients
Add to the dry stuff
Mix well
This should be the consistency. You can add up to 2 tablespoons of water or applesauce if you'd like for moister muffins
Butter your muffin tin or line it with cupcake liners
All finished!
Annnnd add the batter
Sweeet!
Into the preheated oven!
All done! So yummy looking!!
