INGREDIENTS

Put yeast and sugar in a jug.

Add warm water, no hotter than 30c. I like using room temp bottled water.

Stir in yeast allow to sit for a couple mins to dissolve completely.

Put flour, salt and butter in the mixing bowl attachment of your mixer. I like using kenwood as a brand I think they're the best all rounder. If you don't have a mixer you can do this all by hand :-)

Rub the butter into the flour.

It should look like this when you have rubbed on the butter.

Turn the mixer on low and add the yeast and water mixture.if doing by hand just get then in there and mix!

It will all start to come together.

It should all come together like this after a couple of minutes.,if it looks too dry add a tablespoon of water. If too wet a tablespoon of flour.

Turn mixer on medium speed and mix for 10 minutes. Or knead if by hand!

Should be silky and elastic.

Round into a ball.

Put a small amount of olive oil into a glass bowl.


Roll ball onto oil.

Turn over.


Cling film, leave in a warm place to rise. Just out in the kitchen is fine too.. The heat will depend on the speed of rising...

Once it has risen...

Take out a squash down.

Cut in to 4 large pieces. Cut each piece in 3.

Roll each piece into a ball.

Place each ball on a well floured tray.

Sprinkle with flour.

Cover with a tea towel.

Pre heat oven to 220c.

Leave to double in size. About 30mins-90 mins depending on kitchen temp.

Put in oven. 220c.

Put a timer on for 7 minutes.

When timer goes off. Turn tray around 180c. This is so the bread evenly cooks as ovens are rarely even...

Put on for another 5 mins.

Remove from oven.

Tap the bottom of one roll, should sound hollow. If not cook for a couple more minutes. Repeat until cooked.

Allow to cool. Or if you can't resist eat straight away with butter! :-) let me know how you get on!
- 500.0g Strong white flour
- 2.0tsp Salt
- 25.0g Butter
- 175.0g Or Ml of water
- 2.0tsp Sugar
- 2.0tsp Fast action yeast
- Olive oil
