I mentioned that you need a special dough. Yes. It has to hold on its form while baking otherwise the holes will close.
The dough: 3 mins.. Put flour, sugar, almond meal and the salt in a food processor. Pulse few times to mix. Add the butter..pulse pulse until you get a sandy mix. Add the WHOLE egg. Refrigerate 1 hr.
Spread 1/2 cm thickness. Cut and back to fridge or freezer
Then if you don't want to write on the dough directly. Then make a draft to position the letters
With the pointed tip write your message. Then make the holes with the pointed end or the large end. Freeze
Bake in a preheated oven 190C 12-14 mins
