INGREDIENTS
Rinse and clean the lemon and orange skin
Grate the skin of both in a bowl
Chop the butter in a bowl and melt it in the microwave
Set it aside to cool
Strain the flour into a bowl
Add the sugar
Add the baking powder and the pinch of salt
Add the grated orange and lemon peel, whisk all the ingredients together
Add the now cold melted butter and whisk
Crack the eggs in
And whisk everything together
Scoop the sides and refrigerate for about an hour
After an hour take the mix out of the fridge. Take your baking trays, better if you have those specific for madeleines, but any other would would work as well
Scoop some in each of the spots, just fill them halfway as the mix will grow when baking. Bake for 10-12min in a 180C preheated oven
You will see them grow very quickly
Aaand, perfectly baked!
Edit 01: if you want to add a twist, you can swap lemon and orange peel with cocoa powder and soluble coffee in the dough.
