Preheat oven to 375 degrees Fahrenheit.
Line your baking tray with paper liners.
Measure out 2.5 cups of all-purpose flour
Add 1 cup brown sugar
Add 1.5 tsp baking powder
Add 1 tsp baking soda
Add 1/2 tsp salt
Using a whisk, mix your dry ingredients together. Set the bowl aside.
In a separate bowl for wet ingredients, crack two eggs.
Mash 1 cup of ripe bananas (approximately 2 medium-sized bananas)
Add 1 cup mashed banana to your egg/milk mixture.
Add 1/3 cup vegetable oil to the egg/milk mixture.
Add 1 tsp vanilla
Here are your wet ingredients, mix them together!
These were the chocolate chips I used for baking, any are fine.
Measure and add Chocolate Chips to egg/milk mixture.
Add the flour mixture gradually in 1/3rds at a time to the egg/milk mixture.
Mix well between each addition.
Here I'm using a 1/3rd measuring cup to add the muffin mixture to the muffin paper liners/baking tray. Fill it about 1/3rd high.
Put in the oven.
Bake for 25 minutes or until cake tester comes out clean.
Make sure the muffin tops are firm.
Allow them to cool.
