Preheat your oven to 375°F and gather the ingredients.
Coat a loaf pan with olive oil. Sprinkle 1 tablespoon oats in the pan.
Shake the pan back and forth to spread the oats out evenly.
Whisk together the whole wheat flour, all purpose flour, baking powder, baking soda and salt in a large bowl.
In another bowl, mix the remaining 1 cup oats, yogurt, egg, oil and honey. Then, gently stir in the milk.
Add the yogurt mixture into the flour mixture.
Stir until thoroughly incorporated, but do not over mix.
Scrape the batter into the prepared pan.
Sprinkle a tablespoon of oats on top.
Place in the oven, and bake until the top starts to brown. This took my bread about 55 minutes.
Cool on a wire rack for about 15 minutes, then remove from pan.
Finish cooling directly on the wire rack. Enjoy with a little jam or almond butter on top of each slice. Adapted from Eating Well Magazine.
- 1.0c 1 cup old fashioned rolled oats, plus 2 tablespoon
- 1.0c whole wheat flour, or white whole wheat flour
