Bake Mostly Organic Chocolate Chip Pecan Cookies

INGREDIENTS
My butter wasn't room temperature so I softened for 15 seconds in microwave, not enough to make it runny
Now I'm mushing it like a banana till it feels soft
This is the mix of white and dark sugar
Add the sugar mixture, a little at a time
More sugar, more stirring with a fork
This is what it looks like when all the sugar is added
Add 2 eggs
Stir in the eggs
Add in the vanilla
1 cup whole spelt flour
Half teaspoon baking soda
Baking soda, mix into flour
Mixing soda in
1 cup chips, 1 cup pecan halves
Add the flour to wet ingredients, a little at a time, then chips and pecans on top of last addition of flour before turning into batter
Fold together
Finish folding batter
Pre-heat oven to 350. Parchment paper on pan, big dollops of dough: 12 big cookies into oven for 12-14 min

Coconut sugar
Half teaspoon vanilla (or more)
White sugar (the less than organic part) though this is probably 10 year old sugar so perhaps the pesticides have a short half life)

I use Camino 71% chocolate chips

Organic butter (no crappy, evil, bad-for-you margarine substitutes)
- 1/2 cup organic butter
- 1/3 cup white granulated sugar (or less)
- 1/3 cup coconut or brown sugar (or less)
- 2 organic eggs
- 1/2 teaspoon organic vanilla
- 1 cup whole grain spelt flour
- 1/2 teaspoon baking soda
