INGREDIENTS
This recipe makes 6 muffins Place 6 muffin cases in a muffin case tray and preheat the oven to 200 degrees (180 fan assisted)
Cream together the 4oz of sugar and then the butter
Then measure out the self raising flour
Add 1 of the eggs and half the flour to the sugar and butter mixture
Mix this together and repeat the step with the remaining flour and egg.
Spoon the mixture into the muffin tins and place in the oven for around 15-20 mins
Whilst the muffins are cooking mix the 75 g of caster sugar with the lemon juice to make a paste it should be fairly runny (you may want to add a little milk)
Take muffins out of the oven when they are springy to touch and when a knife that's inserted into them comes out clean
Leaving in the muffin tin pour the icing over the muffins
Then after 10 mins remove the muffins from tin and leave on cooling rake till cool

- 4.0oz Margarine
- 4.0oz Self-rising flour
- 2.0 Egg
- 5.0Tbsp Lemon juice
- 75.0g Caster sugar
