Add coconut milk, orange juice, and apple cider vinegar. Wisk these ingredients together and set aside until the mixture curdles.
Prepare the orange zest.
Add canola oil, sugar, and orange zest. Mix
Sift in the flour, baking soda, baking powder, and salt.
Then sift in the cocoa powder.
Wisk until the batter is smooth.
Scoop batter into a cupcake tin and place in an oven heated to 350 degrees F. for 22-24 minutes.
Let the cupcakes cool while you make the frosting.
For frosting: combine 1/2 C. soft cream cheese, 2 C. powdered sugar, 1/2 T. orange juice, pinch of salt, 1/2 T. orange zest, and 1/4 C. coco powder.
Mix the frosting until the desired consistency. Add more or less powdered sugar if needed.
Frost your cooled cupcake and sprinkle orange zest on top.
