INGREDIENTS
Buy a delicata squash. They are rich in potassium, iron, and vitamins A & C. Found late summer to fall.
Preheat your oven to 400 degrees.
Cut in half lengthwise and scoop out the seeds.
Slice as thinly as possible.
Toss in a bowl with a light coating of olive oil. Use 1 tablespoon or less.
Add a sprinkle of salt. Add any other spices you fancy--garlic, paprika, curry powder, pepper or cinnamon are all good choices.
Stir to coat.
Place a thin layer of coated slices on a baking sheet or in a baking pan. You may have to split your slices into two batches.
Bake at 400 for 15 minutes or until they start to brown.
Scoop out with a spatula. Serve warm as a snack or side dish. Enjoy!
