INGREDIENTS
Prepare your ingredients
Place sugar and butter in a mixing bowl
Combine until pale and fluffy
Add in the eggs one at a time, then beat really well to make a fluffy mix
Should look like this after each egg, if it looks like scrambled egg beat more and it will combine
Once all eggs have been added it will look all fluffy like this
Get your flour
Add in slowly a bit at a time and fold in gently to keep the air in the mix
Make sure the flour is combined before you add anymore
Add in your coconut
Combine well
Get ur cases ready and your mixture. I use a spoon in some warm water this will help getting the mixture off the spoon
All ready to go 🤗🤗🤗
Bake in the over for 20 mins on gas mark 4 or 180 degrees c. Make sure they are cooked through, use a skewer if it comes out dry they are done.
Now it's time to make the icing for the top
Get your ingredients
Beat the butter and icing sugar together
Add in the extra coconut and vanilla
Finished
Now cover ur cupcakes with ur buttercream
