Pre heat the oven to gas mark 3, 160C

Place the flour, butter and salt in a mixing bowl

Mix the ingredients together until a breadcrumb consistency is formed, this can be done in a food mixer but I rather do it by hand much more therapeutic :))

Weigh out your coconut,sugar and pour in the mix along with the eggs and milk

It should look like this with a drop consistency

Line a baking tin with whatever u choose I have used a paper case for this one

Place in the oven for 30 mins to begin with

After the 30 mins remove the cake from the oven and sprinkle with some remaining coconut

Then place back in the oven for 30 mins, after this check to see if the cake is golden in colour on the top and a skewer comes out clean from the middle.

Remove the cake for the oven and leave to cool

Then you are left with a lovely coconut cake enjoy with tea or by itself ENJOY!!!!! :))

  • 120.0g Butter
  • 115.0g Light brown sugar
  • 100.0g Coconut
  • 2.0 Lightly beaten eggs
  • 4.0Tbsp Milk
