How to bake "clean" banana bread
This makes a super dank loaf! I advise you to make two, because you will eat the first one really quickly :)

INGREDIENTS
Preheat oven to 350.
Mash four bananas with a fork in a large mixing bowl.
Melt coconut oil in warming oven or in microwave.
Add eggs and beat in with mashed bananas.
Add baking soda. Stir it in with the fork.
Add vanilla extract.
Add cinnamon and stir into mixture.
Add salt. Stir.
Add chopped walnuts and/or pecans. Stir them in.
Add unsweetened apple sauce. Stir it up into the mixture.
Add stevia to your taste. I use about 7 of these small scoops. Stir.
Use some coconut oil to grease the loaf pan.
Add coconut oil to the recipe. Stir everything up really well one last time.
Coconut flour congeals and thickens up quickly, so you want to stir it in as soon as you dump it and use a wire whisk so it doesn't clump up on a spoon or in the batter. Only 1/3 cup is needed!
Stir with a wire whisk.
Use a spatula to scrape batter from the bowl into the greased loaf pan.
Spread the top of the loaf pan smooth.
Bake for one hour.
Or until golden brown and cooked through.
A note about stevia--many people find it bitter. There are some brands that are bitter and some that are not. I really like this brand. Find one you like and don't suffer through the bad taste!
Devour.
Note--You could use 1/4 cup of honey in place of the applesauce and stevia if you don't need a sugar free recipe.

- 4.0 Eggs
- 4.0 Ripe bananas
- 1/3c Coconut oil plus 2 tbs
- 2.0tsp Vanilla extract
- 1.0tsp Baking soda
- 1.0tsp Cinnamon
- 1/4tsp Salt
- 1/3c Chopped pecans or walnuts
- 1/4c Unsweetened applesauce
- Stevia
- 1/2c Coconut flour
