Preheat oven to 180° Celsius
Place the plain flour, self raising flour, brown sugar, chocolate chips and coconut into a bowl
Mix them until they are combined. Use the back of you spoon to remove any lumps from the brown sugar

Place the egg in a bowl and whisk.
Melt the butter in a microwave safe bowl intone microwave for 25 seconds. Don't worry if the butter's not completely melted, it will melt as your stir it into the mixture
Add the butter to the bowl and stir a little bit until mostly combined. It should look at bit like this.
Add the egg and combine. If you add the egg before you combine the butter, you will make scrambled eggs
Grease and line a baking tray
This is the finished mixture. Get some on the spoon and squeeze together to make sure the mixtures right. If it crumbles, the mixture is too dry
Roll into small balls and place on the baking tray. Place in the oven for 15-20 minutes
These are mine just out of the oven. It doesn't matter if the splurge together. I think the more they splurge, the better
Place them on a wire rack and cool. Enjoy!
Evaluation- these cookies were really nice. I liked the coconut in them. When rolling them, they were quite sticky but they turned out fine.
Variations. You could try adding nuts or using white or dark chocolate chips. You could try adding some raspberries (but you'd need to find the right kind)
