INGREDIENTS
Prepare your ingredients
Peel your carrots
Once peeled grate them into a bowl
Place your butter , sugar and golden syrup into a saucepan
Heat on a medium heat until combined storing throughout
Place all your dry ingredients into a bowl
Place cupcake cases Into your cup cake tray
This is what the mixture should look like once melted together
Remove from the heat and get all ur other ingredients
Place the flour , bi carb, cinnamon, salt, carrots and sultanas into the wet mixture
Combine together
Place ur mixture into the cases
Then bake in the oven for 25-30 mins on gas mark 4 or 180 degrees c
Cream cheese ingredients 250g icing sugar 50g butter 110g full fat soft cheese 1tsp vanilla bean paste
Get your ingredients together
Place them all in a bowl, and beat using an electric mixer. The using sugar will spray out so u can add in half bits instead. Or beat fast and try not to get it every where
Finished and ready
Place in your icing bag
Cover each one with a nice covering of cream cheese

- 100g light brown sugar
- 80g unsalted butter
- 150g self-rising flour
- 1/2 tsp bi-carbonate of soda
- 1tsp cinnamon
- 2 medium eggs
- 80g golden syrup
