Pour cereal into a large bowl and pour boiling water over top. Cover with a lid (or plate) and let stand for 30 minutes.
Meanwhile...Chop up dried fruit into small pieces and set aside. I love blending the two fruits, but one or the other still tastes delicious!
Preheat oven to 400 degrees.
In a small bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, blend together egg, brown sugar, oil, and milk.
When the cereal has softened, add the wet mixture and stir together.
Then add the flour mixture.
Add the dried fruit.
Divide the batter evenly between 12 muffin cups.
Bake for 22-24 minutes.
