INGREDIENTS
Combine flour, sugar, salt, and baking powder in a bowl.
Cut in shortening with a pastry blender until mixture resembles coarse meal.
Make a well in center of flour mixture.
Combine melted butter and boiling water.
Pour butter mixture into center of well.
Gently draw flour mixture into butter mixture until moist clumps form.
Press dough into two 4 inch circles.
Wrap in plastic wrap and chill in fridge for 30 minutes.
Combine cinnamon and sugar.
Quarter, core, peel, and chop apples into slices.
Stir cinnamon-sugar mixture into sliced apples.
Coat apple slices evenly, add more cinnamon and sugar as needed to taste.
Place dough in-between 4 pieces of plastic wrap (2 slightly overlapped pieces on top and on bottom)
Roll out dough between sheets of plastic wrap.
Place bottom crust in pie pan.
Place a few small slices of butter in bottom of pie crust.
Place apples in lower crust with butter on top of apples.
Roll out top crust and place on top of pie, pinch around edges, and poke a few holes in the top of the pie.
Sprinkle sugar and cinnamon on top of the pie along with a few small slices of butter.
Bake in a pre-heated oven at 425 degrees for 15 minutes, then reduce temperature to 350 degrees and bake for 50 minutes.
Let cool slightly then serve with ice cream!
