My friends and family love this recipe. Am asked to bake this always. Usually apple pie calls for making dough that needs to be measured and cut out. I haven't tried the traditional pie but will.
So this doesn't need butter except for greasing. It's fun to make! Hope you enjoy this :)
These are the ingredients. You can check out their measurements by clicking the list icon beneath. There is flour, eggs, apple, baking powder, sugar, vanilla essence, oil, cinnamon and your utensils!
Break the eggs into the bowl and whisk them in. You can use cake mixer if you want. I prefer by hand as you will see why.
This is plain sugar powdered.
Add the powdered sugar to the whisked eggs.
Should come out creamy and thicker than beaten eggs consistency.
Add in the vanilla essence or extract. That's the brown spot there.
Mix mix mix. Add in the oil. That looks creepy right?
Add in shifted flour. I have shifted along with it baking powder, salt and half a tbsp of cinnamon.
Mix till all the ingredients are well combined. It becomes a really soft dough. At this point you can chuck the whisk and knead with your hand
The dough feels soft and bit oily. If its oily its actually better as your apple pie will turn out softer. It you find that the dough feels sticky you can add in bit more oil.
You can refrigerate it till we handle the apples. You can skip this step if you want.
Peel that delicious looking apple. You can add in another apple if you want. For this amount one apple is sufficient.
The other apple is for my fruit salad.
Now lets grate in the apple.
De seeded apple!
You can cut the apple however you like. Smaller or larger chunks. You could also cut them thin and layer them in circles in the pan.
Today I grated them as it releases for juice and makes the pie more softer.
Add in a tablespoon of cinnamon or lesser to the grated apples.
Now it's time to assemble. Wow look at the mess. Clean up time!
There. Done. All clean. You can ignore the pomegranate.
Preheat the oven to 200 degrees Celsius for maybe five minutes.
Time to grease the pan. Apply butter to the pan generously. Even if you forgot to take the butter out and it's cold it's alright. It melts as you spread because of the heat from the fingers.
Add in flour and dust it around the pan. Don't rub it in! Just. Swirl the pan. You can seriously skip this if you have parchment paper. I don't prefer cooking spray! They have harmful substances.
Divide the dough into two parts. Can be equal or the dough for the base can be thicker. Apply oil on your hands when handling the dough. Can get sticky.
Press down the dough for the base and equally level it.
Poke holes superficially with a fork.
Now sprinkle in the apple mixture and put the other dough on the top like this.
Level it out. This part is tricky. Since its not a watery batter it won't flow. You need to struggle a bit and u may even think that the dough seems less but trust me it will be alright.
Bake it in the oven for 30 minutes at 200 degrees Celsius.
Had made another batch and this is how they turned out. I used a knife to criss cross on the surface before I baked on.
Hope you would like to try this out. Do leave your comments. Happy baking!
