Once you have horseradish in your garden, you will never get rid of it again. Place it in a corner of your garden where you can control it from spreading.
Autumn bliss. I used some apples that have fallen off the tree.
Remove the apple core and quarter them. Peel on or off is up to you. Pour about 1/2 inch. of water in the pot and add the apples. Boil for 10 minutes on low heat. Stir occasionally.
Some horseradish is stronger than others, mine are very strong. Horseradish contains 3 times more vitamin C than lemons and the strong taste can bring grown men to tears.
I like texture in my applesauce, if you don't, boil a little longer. Cool it down before adding sugar and vinegar to taste. Warm food tastes sweeter than cold and this is served cold.
Add sugar and vinegar to taste. Add horseradish and stir. Heat will destroy the taste of horseradish so always add it after cooling down the dish you are making.
As horseradish is a natural preservative this will keep in the fridge for month. Put it in a jar with a tight lid.

- Sugar to taste
- 2.0in Grated horseradish
- 1.0Tbsp Apple cider vinegar
